Without Prejudice

Cinnamon-spiced pear whiskey forms the base of this wintery twist on an old fashioned.

Combine half a barspoon of simple syrup, two dashes of orange bitters and two dashes of aromatic bitters to a mixing glass.

  1. Add a handful of ice and 30ml spiced pear whiskey and stir for one minute.
  2. Add a second handful of ice and a further 30ml spiced pear whiskey and stir for another minute.
  3. Strain over ice into a chilled rocks glass.

Spiced Pear Whiskey (700ml) – Combine three thinly sliced pears, six cinnamon sticks and a bottle of whiskey in a mason jar or similar container.  Shake the container regularly for three-five days (tasting regularly).  Once it is ready, strain out the solid and store the infused whiskey in a sterile bottle.
